This is a modified version of the El Diablo cocktail based on what I had at my house. I love the fact that cocktails are so flexible and I often modify recipes based on what I have around at the time.
We have a bottle of crème de cassis in our liquor selection, and I wanted to make something using it. The El Diablo is a tequila based cocktail traditionally with lime and ginger beer. I didn’t have ginger beer, so decided to sub lime sparkling water. I did not add any simple syrup because crème de cassis is quite sweet already. I am not a big fan of very sweet cocktails and I tend to avoid adding extra sweetener unless it is really needed.
Crème de cassis is a black currant liquer with a sweet, fruity flavor and it goes great with lime and tequila. This is a light and refreshing cocktail that is perfect for a warm summer night. We drank these on our back deck last night and they were perfect.
