Gold Rush Cocktail

Today’s cocktail is super simple, but surprisingly delicious for only 3 ingredients. The gold rush cocktail is made of bourbon, lemon juice and honey, and that’s all. You can use any bourbon you like for this, but make it one you’d sip on since this drink is mostly bourbon. You don’t want to use one that would make you cringe if you sipped it.

Honey can be hard to dissolve in cold liquids, so there are a couple options here for that component. You can just use straight honey and whisk, shake, or mix for a long time (I used this option). You could also make honey syrup by mixing 1:1 parts honey and water and whisking on the stove until boiling and simmer until it reduces to a syrup consistency. Another option is to add a bit of water to the honey and mix well first before adding to the drink.

I also want to talk about true lemon here. There is no complete substitute for fresh lemon juice. However, if you don’t have lemons or are traveling or just don’t feel like juicing. You can use true lemon. True lemon is just crystalized lemon peel and oil. It doesn’t have any added sugar and it adds a pretty good lemon flavor to drinks. We bring it on vacation when we want to make cocktails but will be in a hotel room or somewhere juicing lemons isn’t practical. I use it at home sometimes too if I’m feeling unmotivated to get the real fruit out and juice it.

Ingredients

  • 2 oz bourbon
  • 3/4 oz honey
  • 3/4 oz fresh lemon juice

Instructions

  • Mix honey as desired as discussed in the post. Combine the ingredients in a cocktail shaker with ice and shake until ice cold. Pour into a glass and serve with and ice cube.
