In addition to the tart cherry ricotta muffins I made this week, I wanted to use some more of the tart cherry concentrate I had leftover so decided to make this sparkling tart cherry vodka limeade. There is a link to the concentrate in the muffin post if you are interested in getting some.
This drink is pretty much what it sounds like: vodka, lime juice, tart cherry concentrate, sparkling water, with a bit of Cointreau added for a nice citrus compliment. I had some meyer lemon vodka, so I used that to bump up the citrus a little.
You could serve this without the sparkling water, for a stronger drink, which is probably how I’d normally go 🙂 but decided to do a lighter sparkling version here. This is one of my favorite drinks I have made lately. Tart cherry concentrate has so much cherry flavor, but without a lot of sugar, which I love. Would definitely make this one again.
