White Beans and Sausage with Greens

This is just about the easiest meal you can make, but it is still so tasty. All you need is a can of white beans, some sausage, some greens and few extras to ramp up the flavor.

I used smoked turkey keilbasa for this, but you could use any kind of sliceable sausage that you like eating. The beans are flavored by adding some chopped garlic, slat, pepper, thyme, lemon juice and parmesan. For the greens, I used a combo of baby kale and broccolini. You could also use regular kale, spinach, mustard greens etc.

There are a few little steps that add flavor to the dish you don’t want to skip. Browning the sausage really increases the flavor and also the texture. I used a bit of my favorite chicken powder in the beans to add flavor….you could also add a little chicken stock instead. Fresh garlic goes a long way here too to add flavor and don’t skip the lemon juice as weird as it sounds. That little touch of acidity rounds out the flavor of the dish.

Ingredients

  • 2 tbsp olive oil
  • 14 oz smoked sausage, sliced
  • 3 garlic cloves thinly sliced
  • 1 15oz can white beans
  • 1/2-1 cup chicken stock or chicken powder plus water
  • 1/2 tsp salt to taste
  • black pepper to taste
  • 1/2 tsp dried thyme
  • 3 cups packed greens/vegetables
  • 1 tbsp lemon juice
  • 1/2 cup parmesan plus more for serving
  • red pepper flakes if you like

Instructions

  • Heat 1 tbsp olive oil in a skillet to high and add the sliced sausage. Allow to brown well on both sides, reducing heat as needed to prevent burning. Add the garlic to the pan and stir for 1 minute.
  • Add the beans as well as the chicken powder and water or chicken stock. Add a small amount of liquid first, then add more as needed. Add the thyme, pepper, parmesan, lemon juice and season with salt to taste.
  • In a separate skillet, heat 1 tbsp olive oil and saute the greens until tender, seasoning with salt and pepper.
  • Scoop some beans and sausage into a bowl along side some greens. Top with shredded parm and serve.
