Thai Chicken Basil Rolls with Hoisin Dipping Sauce
Tasty thai basil chicken in a wrap with fresh veggies, herbs and rice

For the rolls:
- raw tortillas, cooked or other tortillas or wraps
- 1 lb ground chicken or turkey or beef
- 2 tbsp oil
- 1/4 cup soy sauce
- 1 tbsp rice vinegar
- 1 tsp Thai sweet chili sauce
- 1 tbsp sesame oil
- 2 inch piece fresh ginger peeled and minced
- 4 garlic cloves minced
- 1 jalapeno seeded and minced
- 4 mini cucumbers julienned
- romaine lettuce rough chopped
- 4 scallions thinly sliced
- 1/2 cup thai basil leaves, minced you can sub reg basil if you can't find thai but thai basil has an amazing flavor for this
- 1/2 cup cilantro leaves . minced
- cooked jasmine rice I used frozen, microwaveable rice here
For the sauce:
- 1/2 cup hoisin sauce
- 2 tbsp oyster sauce
- 2 tbsp low sodium soy sauce
- 1 tbsp sesame oil
- 2 tbsp rice vinegar
- 2 tbsp mayo to taste
For the rolls:
Cook the tortillas and keep warm under a clean towel. Heat the oil in a skillet and add the ground chicken. Cook over medium heat, breaking apart until it is mostly cooked through.
Add the ginger, garlic, jalapeno and cook for a few more minutes. Then add the sauces and sesame oil and cook over medium low until the liquid mostly evaporates and you have highly flavored chicken coated in sauce left.
Place some of the meat mixture on your tortilla. Add the lettuce, cucumber, herbs and scallions, as well as the rice. Roll up like a burrito. Serve with the dipping sauce on the side.
