Brown Sugar Cinnamon Scones

Flaky scones with brown sugar and cinnamon and vanilla glaze

Ingredients
  

  • 2 1/4 cups AP flour
  • 3 tsp baking powder
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1/2 cup cold salted butter
  • 1/2 cup half and half or cream
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 2 cups powdered sugar + 1 tsp vanilla for the glaze

Instructions
 

  • Pre-heat oven to 375, line a cookie sheet with parchment paper.
  • In a medium bowl beat eggs, then beat in cream, brown sugar and vanilla.
  • In a large bowl whisk together flour, baking powder, sugar, salt and cinnamon.  Then cut in butter until you have a crumb mixture.  This is very similar to how I combine my butter when making pie crust, although your butter pieces need to be a little bit more broken up. You still want some pea sized butter lumps, but not larger than that. Slowly pour some of the liquid into the flour mixture while tossing with a fork. Keep adding liquid until the mixture starts to clump together. You may not need all of the liquid. You don't want super wet dough.
  • Turn onto a floured flat surface and use a bench scraper to push the dough together.  Fold it over onto itself and few times until it comes together into a solid mass. Add a little more liquid if needed. Make a rectangle of dough and then use the bench scraper or a knife to cut into triangles.  Place on the parchment lined pan so they are not touching. Bake for 10-15 minutes until lightly browning and fully cooked. Cool on a baking rack, and make the glaze.
  • Combine the powdered sugar with the vanilla and a little water until you have a thick but spreadable glaze. It should run off the scones a bit when you put it on. Spread over your scones and they are ready.
