Cheesy Chicken Wraps

Tender seasoned chicken in a creamy garlic cheese sauce in a wrap

Ingredients
  

For the cheese sauce:

  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups light cream
  • 6 garlic cloves minced
  • 1/4 tsp dried mustard
  • 1/2 cup shredded mozzarella cheese
  • 3/4 cup shredded cheddar cheese
  • salt and pepper
  • water to thin if needed

For the wraps:

  • 4 wraps or burrito tortillas
  • 3 boneless skinless chicken breasts thinly sliced
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried parsley
  • 1 tsp salt
  • fresh ground pepper
  • 2 tbsp oil

Instructions
 

  • Thinly slice the chicken and toss with the seasonings. Heat the oil in a skillet over medium and heat until hot. Add the chicken and allow to brown well on one side before stirring. Cook, stirring occasionally until cooked through. Leave in the pan and set aside.
  • For the cheese sauce, melt the butter in a sauce pan over medium low heat. Add the garlic and cook for a minute or two until fragrant. Whisk in the flour and cook for about 1 minute. Slowly pour in the cream a little at a time while whisking, making sure to whisk until smooth each time before adding more cream. This will prevent lumps.
  • Once you've added all the cream, add the mustard and a pinch of salt and pepper. Once it has thickened, reduce the heat to low and add the cheese slowly in a few handfuls, mixing it in before adding more. This will make a smooth sauce. If the sauce seems to thick you can whisk in some water, but you want a fairly thick sauce. Taste and adjust the salt and pepper.
  • Pour enough cheese sauce over the chicken to coat it well. Mix this and if needed, heat a bit over low to warm the chicken. Lay out the wrap and fill one side with chicken and cheese sauce and roll up. Enjoy!
