Cobb Salad with Shallot Vinaigrette

For the dressing:
- 1 shallot finely minced
- 2 tbsp coarse mustard
- 2 tbsp honey to taste
- 1/3 cup champagne vinegar
- 1/3 cup olive oil
- 2 tbsp water
- salt and pepper to taste
For the salad:
- 2 heads romaine lettuce washed and chopped
- 2 large tomatoes diced
- crumbled bacon
- 1 avocado diced
- 1 cup blue cheese crumbles
- 4 hard boiled eggs halved
- 8 oz deli ham sliced into sticks
- 8 oz deli turkey sliced into sticks
Whisk all the dressing ingredients together, taste, and season with salt and pepper. Place the lettuce, tomato, turkey, ham, eggs, avocado, tomato and bacon onto plates. Top with blue cheese crumbles. Drizzle with dressing and serve.
