Homemade Ginger Beer
Slightly sweet and spicy with lemon and hints of cinnamon, clove, pepper and allspice

- 2 6 inch pieces of ginger
- 15 whole cloves
- 1 tbsp allspice berries
- 1 small cinnamon stick
- 1 tbsp black peppercorns
- 1-2 cups brown sugar
- 4 lemons
- 6 cups water
Scrub the ginger and remove any peel you can't get clean. Cut into a few larger pieces. Combine the ginger and a cup of water in a small blender and well. Add this to a stock pot with 5 cups of water and the cinnamon stick, cloves, allspice and black pepper. Heat to a simmer and cook for 5 minutes, then cool and transfer to a container with a lid and place in the fridge overnight.
Strain the mix through a fine mesh strainer or cheesecloth. Add the juice from the 4 lemons and add 1 cup of sugar and stir to dissolve. Taste and add more sugar and lemon to taste. If you feel the ginger is too strong, you can add more water. You can also add sparkling water for a carbonated version. Serve over ice.
