Instructions
Mix and knead all of the dough ingredients — by hand or mixer, until you have a soft smooth dough. Make sure it passes the windowpane test. If the dough seems too dry while mixing, add a tbsp of water at a time until it is soft and supple. If it is very sticky and loose, add a tbsp of flour at a time until it is the right consistency.
Move the dough to a greased rising container and allow to rise for around an hour, or until it doubles.
Divide into 8 pieces and shape into balls. There are a few ways to do this, look on youtube for a roll shaping video if you haven't done it before. Place the 8 balls on a parchment lined baking sheet and cover with greased plastic wrap. Allow to rise another 30-40 minutes, until well risen. When you lightly press on a roll, it should leave a dent that doesn't bounce back right away.
Preheat the oven to 375 and bake for 12-16 minutes, until nicely golden. Cool on a rack.
