Loaded Hummus Dip
Loaded hummus dip with tasty veggies, olives, feta and balsamic

- 2 cups hummus of your choice
- 1 cup diced Persian cucumber
- 1 cup diced cherry tomatoes
- 1 cup mixed pitted olives
- 1/2 cup crumbled feta cheese
- chopped parsley and/or scallions
- drizzle of good olive oil
- drizzle of good balsamic vinegar
- Pita and pita chips for serving
- falafel (optional)
Spread the hummus in a pie plate or other shallow bowl. In a large bowl, toss the tomatoes, cucumbers and olive mix and season with salt and pepper. Top hummus with this mix, followed by the feta and parsley or scallions. Drizzle with the oil and vinegar and serve with pita chips and falafel.
