Marinated Tomato and Feta Salad

Delicious marinated tomato salad with feta, capers, pepperoncini and red wine vinegar dressing

Ingredients
  

  • 4 large ripe tomatoes Ideally heirloom or vine ripened or garden
  • 1 small onion or red onion thinly sliced
  • 2 tbsp good olive oil
  • 2 tbsp red wine vinegar
  • salt and pepper
  • 1/4 cup feta cheese
  • 1/4 cup pepperoncini rings
  • 1/4 cup capers
  • 1/2 cup fresh basil, parsley, cilantro chopped, one or a mix - optional
  • 1 tsp dried italian seasoning
  • sprinkle red pepper flakes

Instructions
 

  • Combine the tomatoes and sliced onions with all of the dressing ingredients and stir well. Add the feta and gently toss. Place in the fridge and allow to marinated for a few hours, stirring once or twice. Taste for salt and pepper and adjust as needed then serve.
