- 4 large ripe tomatoes Ideally heirloom or vine ripened or garden
- 1 small onion or red onion thinly sliced
- 2 tbsp good olive oil
- 2 tbsp red wine vinegar
- salt and pepper
- 1/4 cup feta cheese
- 1/4 cup pepperoncini rings
- 1/4 cup capers
- 1/2 cup fresh basil, parsley, cilantro chopped, one or a mix - optional
- 1 tsp dried italian seasoning
- sprinkle red pepper flakes
