Paprika Chicken with Olive Walnut Vinaigrette

For the chicken:
- 8 bone in chicken thighs
- 1/4 cup olive oil
- 1 1/2 tsp kosher salt
- pepper to taste
- 1 tbsp lemon juice
- 1 tsp coriander
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
For the dressing:
- 1/2 cup chopped castelvetrano olives
- 1/2 cup chopped toasted walnuts
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped fresh basil
- 1 clove garlic minced
- 1/2 cup olive oil
- 1/4 cup sherry vinegar
- salt and pepper to taste
For the chicken:
Combine the spices and salt and pepper. Drizzle chicken with the oil and rub the spice mix all over the chicken thighs and place on a foil lined baking sheet. Allow to rest 20 minutes at room temp. Heat the oven to 400 and place chicken in. Cook for 45-60 minutes, until well cooked and easy to remove from the bones.
