Cut the block of feta into 16 pieces after drying with paper towels.
Cut the phyllo into 3 sets of long strips. It comes in large sheets and if you divide it into 1/3s on the short side you will get 3 sets of long strips.
Melt some butter and using a pastry brush, brush one of the long strips with butter. Layer on another strip and brush with more butter. I used 2-3 strips per piece of cheese. Fold the long edges up over the cheese like you are wrapping a present and then roll the cheese up in the rest of the dough.
I then trimmed the longer edges of phyllo so there wasn't so much excess. Brush the top with butter and set on a cookie sheet lined with parchment.
Heat the oven to 400 degrees. Once all the feta is wrapped, place into the oven for 10-15 minutes until lightly golden brown. The cheese will start to come out of the pastry if it is baked too long so watch it closely.
Move the feta bites to your serving platter and drizzle with honey and sesame seeds.
As I mentioned, if I made these again, I would try putting a dollop of hot pepper bacon jam on top of the feta before wrapping them, or at least serve it as a dollop on top. It really brought these to a different level once we added the jam.
