Course Lunch, Main Course
- 1.5-2 lbs flank steak trimmed and cut into bite sized pieces
- 1/4 cup orange juice
- 2 tbsp lime juice
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp chipotle chili powder
- 1/2 tsp regular chili powder
- 1/2 tsp cumin
- 1 tsp salt
- warmed corn tortillas to serve
- chopped cilantro and onion to serve
- lime juice to serve
- salsa to serve
Combine the marinade ingredients in a bowl and add the chopped steak. Toss well and marinate for 15 minutes up to 3 hours. When ready to cook, heat a little oil in a skillet until smoking over high heat.
Add the steak and do not move it. Allow it to fully sear on one side before you stir. Stir and sear a bit more. You can leave the steak medium rare, or if you prefer you can cook it a bit longer. Taste it and add salt if needed.
Warm corn tortillas by heating a skillet over medium high heat and then add a few tortillas at a time until they are slightly charred and warm. Move to a plate with a towel covering it until ready to eat.
Mix the chopped onion and cilantro with a pinch of salt and the juice of a lime. Mix well. Serve on the side along with the salsa.
