Rotisserie Chicken Salad with Ginger Orange Dressing
Easy, healthy and delicious salad with rotisserie chicken, kale, cabbage, carrots, scallions, cilantro and ginger orange dressing

For the dressing:
- 1/4 cup toasted sesame oil
- 2 tbsp honey
- 1/2 cup fresh OJ
- 3 tbsp rice vinegar
- 3 tbsp soy sauce
- 1 tbsp fresh ginger minced
- 1 garlic clove minced
- 1/4 tsp turmeric
- salt and pepper to taste
For the salad:
- 1 rotisserie chicken meat shredded
- 1 package coleslaw mix or 3 cups shredded cabbage
- 2 cups shredded kale
- 1 cup shredded carrots if not using coleslaw mix
- 1 jalapeno minced
- 1-2 ripe avocados diced
- 1 cup cilantro leaves
- 1 cup scallions sliced on the bias
- 2 cups crispy onion strings store bought or make your own by frying thinly sliced onions
For the dressing - mix all ingredients and whisk well. Taste and adjust salt, pepper, vinegar and OJ as needed.
Combine the salad ingredients other than the onion straws in a large bowl and toss. Drizzle with the dressing then toss well again. Top with onion straws and serve heaping plates or bowls of this tasty salad.
