Course Lunch, Main Course
- 2.5 lbs ribs
- 2 tbsp brown sugar
- 2 tsp smoked paprika
- 2 tsp kosher salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp Chinese 5 spice powder
- 1/2 tsp ground ginger
- 1/4 tsp white pepper
For the sauce:
- 1 tbsp sesame oil
- 10 garlic cloves minced
- 2 tbsp chopped fresh ginger
- 2/3 cup brown sugar
- 1/2 cup soy sauce
- 1/3 cup rice vinegar
- 1/4 cup honey
- red pepper flakes to taste
Heat the oven to 300 degrees. Mix the spices for the dry rub together well. Line a sheet pan with foil. Rub the dry rub into the ribs well and wrap tightly in more foil.
Place into the oven and bake for 3 hours or so. I prefer my ribs fully tender and meat falling off the bones. You can adjust the time if you like them more firm.
For the sauce, heat the sesame oil over medium heat in a sauce pan and add the ginger and garlic. Cook for a minute, then add the rest of the ingredients. Stir well, bring a simmer and simmer for a few minutes until thickened up a bit.
In the last 15-20 minutes, open the foil on the ribs and brush them with the glaze. Don't close the foil back up. Continue baking and glazing every few minutes until the glaze is getting caramelized. You can turn on the broiler to speed this up if you like, just make sure not to burn the glaze too much. Serve with rice.
