Turkey Chili

Ingredients
  

  • 2 tsp olive oil
  • 1 large onion chopped
  • 4 cloves of garlic minced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 2 tomatoes diced
  • 1 package frozen corn
  • 1 can kidney beans
  • 1 lb ground turkey breast
  • 1 tbsp chili powder
  • 1 tsp ancho chili powder
  • 1/2 tsp chipotle chili powder
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp smoked paprika
  • salt and pepper to taste
  • 1 28oz can crushed tomatoes
  • Few dashes of your favorite hot sauce I used texas pete this time
  • water if needed
  • onion, cilantro, cheese, sour cream, chips, avocado optional toppings

Instructions
 

  • Heat the oil in a large pot over medium and add the onion, garlic, and peppers. Cook for a few minutes with a sprinkle of salt. Add the turkey breast, all the spices, a bit more salt and pepper and cook, breaking apart the turkey for a couple of minutes.
  • Add the spices in along with the fresh and canned tomatoes, corn and beans. Simmer, stirring occasionally, for about 20 minutes. Add hot sauce. Taste and adjust seasonings as needed. If not using hot sauce, add a tsp or two of vinegar instead.
  • Serve with whatever toppings you like.
