Turkey Taco Salad with Jalapeno Lime Dressing
Healthy Mexican spiced turkey taco salad with creamy jalapeno lime dressing

For the salad:
- 2 tbsp olive oil
- 1 lb ground turkey breast
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- 1 tsp ancho chili powder
- 1 tsp coriander
- 1 tsp cumin
- salt and pepper to taste
- 1/2 cup cilantro chopped
- 6 cups lettuce
- 1 can black beans drained and seasoned as you like
- 1 red pepper diced
- 1/2 red onion finely diced
- 1/2 pint cherry tomatoes halved
- 1 cup shredded cheese
For the dressing:
- 1 cup 2% greek yogurt or reduced fat sour cream
- 2 tbsp lime juice
- 1-2 tbsp white vinegar
- 1 jalapeno seeded and diced
- 1 large clove garlic
- 1/4 cup cilantro
- salt and pepper to taste
For the salad:
Add the oil to a skillet over medium heat. Add the turkey and cook, stirring and breaking up the meat. Add all the spices and salt and pepper and continue cooking until the turkey is full cooked. Taste and season more if needed. Set aside to cool down a little while you prep the other salad ingredients.
Place the lettuce onto plates and top with the veggies, beans, cheese and meat. Drizzle with dressing and serve with extra dressing on the side. I also added some crushed tortilla chips on top.
