White Beans and Sausage with Greens
Sausage with white beans, greens, garlic and parmesan

- 2 tbsp olive oil
- 14 oz smoked sausage, sliced
- 3 garlic cloves thinly sliced
- 1 15oz can white beans
- 1/2-1 cup chicken stock or chicken powder plus water
- 1/2 tsp salt to taste
- black pepper to taste
- 1/2 tsp dried thyme
- 3 cups packed greens/vegetables
- 1 tbsp lemon juice
- 1/2 cup parmesan plus more for serving
- red pepper flakes if you like
Heat 1 tbsp olive oil in a skillet to high and add the sliced sausage. Allow to brown well on both sides, reducing heat as needed to prevent burning. Add the garlic to the pan and stir for 1 minute.
Add the beans as well as the chicken powder and water or chicken stock. Add a small amount of liquid first, then add more as needed. Add the thyme, pepper, parmesan, lemon juice and season with salt to taste.
In a separate skillet, heat 1 tbsp olive oil and saute the greens until tender, seasoning with salt and pepper.
Scoop some beans and sausage into a bowl along side some greens. Top with shredded parm and serve.
