7 Layer Dip Burritos
Mexican 7 layer dip in burrito form- refried beans, rice, guacamole, sour cream, lettuce, tomato, olives, cheese and salsa

- 4 burrito tortillas
- 1/2 can refried beans or more to taste
- Mexican seasoned rice optional
- shredded lettuce
- chopped tomato
- 1 can sliced black olives
- 1 1/2 cups guacamole homemade or store
- shredded cheese
- sour cream to taste
- salsa to taste
For guacamole (if using homemade):
- 4 avocados
- 2 tsp lime juice or a packet or two of true lime
- few dashes of tobasco
- 1-2 tbsp mayo or sour cream depending on how soft your avocados are
- a sprinkle of garlic powder
- salt to taste
Cook the rice according to package, adding some seasoning if you are using plain rice. I added chili powder, garlic powder, onion powder, cumin and salt. Make the guacamole if you are using homemade. Mash the avocado with the rest of the ingredients and season to taste.
Heat the beans until they are nicely hot. Lay out a tortilla and add some beans. Top with rice and the rest of the layers then roll up into a burrito. Cut in half if you like. Serve with salsa or hot sauce.
