7 Layer Dip Burritos

This recipe is basically a bunch of 7 layer dip, wrapped up in a tortilla. Doesn’t that sound good? I loved these and they were pretty easy to make. This is a no meat recipe as is, but you could easily add some seasoned ground beef, chicken or shrimp to these.

What is in 7 layer dip? Typically refried beans, cheese, olives, tomatoes, lettuce, sour cream and guacamole. It is usually eaten with tortilla chips, but I liked the idea of making it into a burrito. Since the ingredients are pretty simple here, you want to make sure everything is well seasoned. I added some rice to fill these out a little more, which I seasoned with chili powder, garlic powder, onion powder, cumin and salt.

I made homemade guacamole for these, as it is a major flavor component. You can make it however you like it and also use whatever salsa you prefer. We ate these with some Valentina hot sauce drizzled on them. Yummy!

Ingredients
  

  • 4 burrito tortillas
  • 1/2 can refried beans or more to taste
  • Mexican seasoned rice optional
  • shredded lettuce
  • chopped tomato
  • 1 can sliced black olives
  • 1 1/2 cups guacamole homemade or store
  • shredded cheese
  • sour cream to taste
  • salsa to taste

For guacamole (if using homemade):

  • 4 avocados
  • 2 tsp lime juice or a packet or two of true lime
  • few dashes of tobasco
  • 1-2 tbsp mayo or sour cream depending on how soft your avocados are
  • a sprinkle of garlic powder
  • salt to taste

Instructions
 

  • Cook the rice according to package, adding some seasoning if you are using plain rice. I added chili powder, garlic powder, onion powder, cumin and salt. Make the guacamole if you are using homemade. Mash the avocado with the rest of the ingredients and season to taste.
  • Heat the beans until they are nicely hot. Lay out a tortilla and add some beans. Top with rice and the rest of the layers then roll up into a burrito. Cut in half if you like. Serve with salsa or hot sauce.
