Asian Spam Bake
Delicious dish of seasoned rice topped with crispy glazed spam, chili crisp mayo, avocado and scallions and a sprinkle of furikake

For the rice:
- 6 cups cooked Asian rice see my blog post on perfectly cooking asian rice on the stove top
- 1 tbsp rice vinegar
- 1/4 tsp salt
- 1/4 tsp sugar
For the spam:
- 2 cans spam cut into bite sized pieces
- 1/4 cup soy sauce
- 1/4 cup mirin
- 1 tbsp sugar
- 1-2 tsp sriracha sauce optional
For the mayo:
- 1/4 cup mayo
- 1 tbsp chili crisp
- water to thin to drizzle consistency
For topping:
- 2 ripe avocados cut into bite sized pieces
- 6 scallions sliced
- furikake optional
Toss the cooked rice well with the rice vinegar, sugar and salt and spread in a 9x13 pan.
Heat a skillet over medium heat and add the spam. Cook, stirring and flipping pieces until each side is browned and crispy, about 5 minutes. Mix the soy, mirin, sugar and sriracha and pour over the spam. Toss to caramelize a bit then remove from heat and spread over the rice.
Mix the mayo and chili crisp and drizzle over the top. Place under the broiler for about 5 minutes, watching so it doesn't burn to get everything nice and hot. Top with avocado, scallions and furikake and serve with roasted seaweed packs on the side to eat it with if you like.
