
This Asian spam bake has layers of seasoned rice topped with crispy, caramelized glazed Spam, creamy avocado, scallions, and a drizzle of spicy chili crisp mayo. Finished with a sprinkle of furikake for that perfect umami crunch in every bite. Comforting, bold, and irresistibly savory.
If you think you don’t like spam, please give a try prepared like this! Crispy, salty, a tiny bit sweet, and so delicious. My family loved this for dinner and it is cheap and really easy to make. The spam is fried until crisp and then glazed with a soy/mirin/siracha glaze that adds amazing flavor. Served over sushi rice, drizzled with chili crisp mayo and topped with fresh avocado and cilantro, trust me you won’t be able to stop eating this dish. You can use any kind of furikake you like on this, but I really liked the shiso one here on this dish. I like using this chili crisp for the mayo and just in general. You can buy these roasted seaweed packs at a lot of places these days and they make a great snack and are great for eating with this dish. I think this would make an awesome buffet or party dish too, as it is something different than what you usually see and I think pretty much anyone would love it. Asian Spam Bake
Ingredients
For the rice:
- 6 cups cooked Asian rice see my blog post on perfectly cooking asian rice on the stove top
- 1 tbsp rice vinegar
- 1/4 tsp salt
- 1/4 tsp sugar
For the spam:
- 2 cans spam cut into bite sized pieces
- 1/4 cup soy sauce
- 1/4 cup mirin
- 1 tbsp sugar
- 1-2 tsp sriracha sauce optional
For the mayo:
- 1/4 cup mayo
- 1 tbsp chili crisp
- water to thin to drizzle consistency
For topping:
- 2 ripe avocados cut into bite sized pieces
- 6 scallions sliced
- furikake optional
Instructions
- Toss the cooked rice well with the rice vinegar, sugar and salt and spread in a 9×13 pan.
- Heat a skillet over medium heat and add the spam. Cook, stirring and flipping pieces until each side is browned and crispy, about 5 minutes. Mix the soy, mirin, sugar and sriracha and pour over the spam. Toss to caramelize a bit then remove from heat and spread over the rice.
- Mix the mayo and chili crisp and drizzle over the top. Place under the broiler for about 5 minutes, watching so it doesn't burn to get everything nice and hot. Top with avocado, scallions and furikake and serve with roasted seaweed packs on the side to eat it with if you like.
