Buffalo Chicken Lettuce Wraps

For the chicken:
- 1.5 lbs boneless skinless chicken breast
- olive oil for cooking
- 1.5 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried italian seasoning
- 1/4 cup buffalo sauce plus more for tossing after cooking
For the coleslaw:
- 1 bag coleslaw mix
- 1/4 cup mayo or to taste
- 1 tsp salt or to taste
- 2 tbsp white vinegar more to taste
- 1 tsp celery seed
- 1 tbsp sugar to taste
To serve:
- quick pickled red onion toss onion slices in 1/2 water 1/2 white vinegar for 10 minutes
- lettuce leaves
- crispy fried onions I use the french's ones
- bbq sauce or ranch to drizzle
Cut the boneless skinless chicken into thin slices, then toss with the spices, salt and pepper and buffalo sauce. Marinate for 10-15 minutes if you want, but it isn't necessary. Heat a skillet to medium heat and add a tbsp or two of olive oil.
Add the chicken and cook, stirring occasionally, until the chicken is tender and fully cooked. Once it is done, taste it and adjust the salt and add more buffalo sauce and toss if you like.
For the coleslaw, combine the ingredients and mix well. Taste and adjust the seasoning.
To serve, pile each lettuce leaf with chicken, red onion coleslaw, bbq sauce and crispy onions.
