If you love Buffalo chicken but want something lighter than the usual wings or sandwiches, these Buffalo Chicken Lettuce Wraps are the perfect fix. Juicy, spicy chicken, crisp lettuce, pickled red onions, coleslaw, and crispy onion straws—every bite is packed with heat, crunch, and freshness. Plus, they’re low-carb, high-protein, and come together in under 30 minutes.

You can totally customize these to your liking. Shredded cheddar cheese or blue cheese would be so good. You could also add diced avocado or guacamole. I used a drizzle of bbq sauce, but ranch would also be great. We ate these wraps, and then ate leftover buffalo chicken coleslaw bowls for lunch. Yum!

Buffalo Chicken Lettuce Wraps

Tasty buffalo chicken lettuce wraps

Ingredients
  

For the chicken:

  • 1.5 lbs boneless skinless chicken breast
  • olive oil for cooking
  • 1.5 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried italian seasoning
  • 1/4 cup buffalo sauce plus more for tossing after cooking

For the coleslaw:

  • 1 bag coleslaw mix
  • 1/4 cup mayo or to taste
  • 1 tsp salt or to taste
  • 2 tbsp white vinegar more to taste
  • 1 tsp celery seed
  • 1 tbsp sugar to taste

To serve:

  • quick pickled red onion toss onion slices in 1/2 water 1/2 white vinegar for 10 minutes
  • lettuce leaves
  • crispy fried onions I use the french's ones
  • bbq sauce or ranch to drizzle

Instructions
 

  • Cut the boneless skinless chicken into thin slices, then toss with the spices, salt and pepper and buffalo sauce. Marinate for 10-15 minutes if you want, but it isn't necessary. Heat a skillet to medium heat and add a tbsp or two of olive oil.
  • Add the chicken and cook, stirring occasionally, until the chicken is tender and fully cooked. Once it is done, taste it and adjust the salt and add more buffalo sauce and toss if you like.
  • For the coleslaw, combine the ingredients and mix well. Taste and adjust the seasoning.
  • To serve, pile each lettuce leaf with chicken, red onion coleslaw, bbq sauce and crispy onions.
