Easy Chicken Tacos

For the chicken:
- 1.5 lbs boneless skinless chicken breasts trimmed
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp Mexican oregano or dried oregnano
- 1/2 tsp smoked paprika
- 1 tsp chili powder up to 1 1/2 if only using this kind
- 1/2 tsp ancho chili powder
- 1/2 tsp chipotle chili powder
- 2 tbsp olive oil
- 2 tsp salt
- black pepper to taste
- juice of 1 lemon or lime
- 2 tbsp water
For the tacos:
- tortillas
- shredded lettuce
- chopped tomato
- shredded cheese
- sour cream
- salsa
- guacamole
Combine all the chicken ingredients in a ziploc and mix well. Allow to marinate as long as you can up to overnight.
Heat a non stick skillet over medium heat and add a tbsp of oil. Place the chicken breast in the pan and allow to cook until well seared on one side. Flip them and sear the other side. Cover the pan and allow the chicken to cook over medium low until fully cooked. If the chicken is burning, add a little water to the pan as needed.
When fully cooked, allow to cool for a few minutes on a cutting board, then slice thinly. Serve with the rest of the taco ingredients.
