
This is one of those super easy recipes I tend to make when I don’t want to think about what is for dinner, or I don’t have a lot of time. Most of the the recipe can be store bought and that makes it super easy and fast.
I use pretty much the same seasoning mix here I use when I make ground beef tacos, or anything taco flavored. It sometimes varies by what is in my spice cabinet on a given day but the core spices are always the same – various chili powder, garlic powder, coriander, onion powder, Mexican oregano (or regular if I don’t have Mexican), smoked paprika, cumin, salt and pepper. I love this mix and you can adjust amounts of each spice to your taste.
I used a mix of ancho chili powder, chipotle chili powder and just standard chili powder here….you can use just the standard one if you don’t have or want to buy the others. I typically will add a little lemon or lime juice to this if marinating chicken and will marinate it overnight if I think of it. If I don’t, I try to get it done in the morning or at least an hour ahead, but if not, this spice mix has plenty of flavor. Easy Chicken Tacos
Ingredients
For the chicken:
- 1.5 lbs boneless skinless chicken breasts trimmed
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp Mexican oregano or dried oregnano
- 1/2 tsp smoked paprika
- 1 tsp chili powder up to 1 1/2 if only using this kind
- 1/2 tsp ancho chili powder
- 1/2 tsp chipotle chili powder
- 2 tbsp olive oil
- 2 tsp salt
- black pepper to taste
- juice of 1 lemon or lime
- 2 tbsp water
For the tacos:
- tortillas
- shredded lettuce
- chopped tomato
- shredded cheese
- sour cream
- salsa
- guacamole
Instructions
- Combine all the chicken ingredients in a ziploc and mix well. Allow to marinate as long as you can up to overnight.
- Heat a non stick skillet over medium heat and add a tbsp of oil. Place the chicken breast in the pan and allow to cook until well seared on one side. Flip them and sear the other side. Cover the pan and allow the chicken to cook over medium low until fully cooked. If the chicken is burning, add a little water to the pan as needed.
- When fully cooked, allow to cool for a few minutes on a cutting board, then slice thinly. Serve with the rest of the taco ingredients.
