Feta Garlic and Herb Crusted Salmon
Tender salmon baked with a garlic, feta and herb crust

- 4 salmon filets skinless
- 1/2-1 cup feta cheese depending on the size of your fish pieces, you want to cover the entire top
- 1/4 cup chopped fresh parsley
- 6 garlic cloves minced
- juice from 1 lemon
- salt and pepper
Heat the oven to 400 and line a baking sheet with parchment. Place the fish onto the baking sheet. Season well with salt, pepper and lemon juice.
Chop the parsley and garlic together, then add the feta and chop that a little as well. Mix in a bowl with a little olive oil.
Spread the mixture on top of the fish, and bake for 20-25 minutes until fish is cooked and the topping is starting to brown a bit. You can cook veggies along with the fish on the baking sheet for an easy side dish too if you like. Serve with rice and veggies on the side.
