
If you love feta, this recipe is for you :) I personally could just eat feta crumbles straight from the container, so I loved this. I served this garlic, feta and herb crusted salmon over some rice pilaf with some charred broccolini that I baked along with the salmon and some cucumber/tomato salad. 
Start with high quality salmon for this dish as I find it makes a lot of difference whether I enjoy fish recipes or not. Low quality fish is just hard to enjoy. Unless I have access to a fresh seafood market (which I don’t usually), I buy frozen fish and defrost the night before cooking. I find the fish much fresher this way than buying at the grocery seafood counter where they have defrosted and let it sit. 
The topping for the salmon here is a mixture of feta (I used Greek flavored feta), fresh chopped garlic, parsley, and a bit of olive oil.  I seasoned the fish first with garlic salt, pepper and a little lemon juice.  The mixture is spread on top of the fish and baked until golden and you get these amazing crispy feta bits on top.  I may just bake some leftover feta as a snack it was so good. 

Feta Garlic and Herb Crusted Salmon
Ingredients
- 4 salmon filets skinless
- 1/2-1 cup feta cheese depending on the size of your fish pieces, you want to cover the entire top
- 1/4 cup chopped fresh parsley
- 6 garlic cloves minced
- juice from 1 lemon
- salt and pepper
Instructions
- Heat the oven to 400 and line a baking sheet with parchment. Place the fish onto the baking sheet. Season well with salt, pepper and lemon juice.
- Chop the parsley and garlic together, then add the feta and chop that a little as well. Mix in a bowl with a little olive oil.
- Spread the mixture on top of the fish, and bake for 20-25 minutes until fish is cooked and the topping is starting to brown a bit. You can cook veggies along with the fish on the baking sheet for an easy side dish too if you like. Serve with rice and veggies on the side.
