Heat oven to 325. In a large dutch oven, add the pork pieces, soy, honey, garlic, ginger, red pepper flakes, sesame oil, and lime.
Cover and place into the oven for 3 or so hours. Turning the pork ever hour and checking the consistency of the sauce. Since there is a lot of sugar, you need to watch for burning. If too much liquid evaporates, the sauce will burn and not taste good, so keep and eye out and add some water if needed.
Once the pork is pull apart tender, remove from the oven and shred it into a bowl. If the sauce is a good thickness, mix with the pork. If not, boil on the stove a bit to reduce it and then mix.
Add the lime, sesame seeds and vinegar to the meat and toss well. Season with salt and pepper as desired. Serve with rice, noodles or lettuce cups and scallions and cilantro for topping.
