Honey Garlic Soy Roast Pork Lettuce Wraps

Garlic honey soy roast pork is a super simple recipe that takes one pot and cooks slowly in the oven and is packed with flavor. This recipe is really versatile. You can serve it as lettuce wraps as I did, or you can add it to noodles or rice with some vegetables. You need to use pork shoulder/butt for this recipe, because of the cooking method. A leaner cut of meat would be too try in this preparation.

I love that for this dish, all you have to do is add a few things to an oven safe pot with a lid, throw it in the oven, flip the meat once in a while and let it cook. The sauce makes itself in the pot and you just serve it. I thought this was a tad bit too sweet, so if I made it again I would cut the honey in half, and I’d replace that 1/2 cup honey with 1/4 cup water. I also added a tbsp or two of Chinese soy vinegar as well as extra sesame oil to give a little more depth to the flavor here. We ate these with some sriracha, scallions and cilantro. My husband made an omelet with the leftover meat, and that was amazing.

Ingredients
  

  • 3 to 4 lbs boneless pork shoulder trimmed of major fat and cut into a few chunks
  • 8 garlic cloves minced
  • 1 4 inch piece fresh ginger peeled and minced
  • 1 tsp red pepper flakes
  • 2 tsp lime zest
  • 2 tbsp lime juice I used true lime instead of zest and juice
  • 1 cup low sodium soy sauce
  • 1 cup honey I would reduce to 1/2 cup and add 1/4 cup water
  • 2 tbsp sesame oil
  • rice, noodles or lettuce cups for serving
  • cilantro and scallions for serving
  • toasted sesame seeds for serving
  • few dashes of Chinese soy vinegar optional
  • hot sauce for serving optional

Instructions
 

  • Heat oven to 325. In a large dutch oven, add the pork pieces, soy, honey, garlic, ginger, red pepper flakes, sesame oil, and lime.
  • Cover and place into the oven for 3 or so hours. Turning the pork ever hour and checking the consistency of the sauce. Since there is a lot of sugar, you need to watch for burning. If too much liquid evaporates, the sauce will burn and not taste good, so keep and eye out and add some water if needed.
  • Once the pork is pull apart tender, remove from the oven and shred it into a bowl. If the sauce is a good thickness, mix with the pork. If not, boil on the stove a bit to reduce it and then mix.
  • Add the lime, sesame seeds and vinegar to the meat and toss well. Season with salt and pepper as desired. Serve with rice, noodles or lettuce cups and scallions and cilantro for topping.
