Honey Mustard Chicken BLTs

Tender blackened chicken served on a soft roll with bacon, lettuce, tomato, red onion and honey mustard

Ingredients
  

For the chicken:

  • 2 lbs chicken breasts, or tenders
  • 1/2 tbsp smoked paprika
  • 1/2 tsp cayenne
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp thyme
  • 1 tsp black pepper
  • 1 1/2 tsp salt
  • 2 tbsp olive oil

For the sandwiches:

  • buns or bread
  • cooked bacon
  • shredded lettuce
  • sliced tomato
  • sliced red onion
  • honey mustard mixed half and half with mayo

Instructions
 

  • Combine the seasoning for the chicken and mix in a ziploc with the chicken pieces. If using breasts, cut into 2 pieces and butterfly the thick end to make cooking easier. Allow to marinate at least an hour up to overnight.
  • Heat 2 tbsp oil in a skillet over medium high and add the chicken. Cook, flipping once or twice until nicely browned and cooked through.
  • Cook the bacon in your preferred method. I like to use the oven. Slice your rolls and add some honey mustard mayo to both sides. Top with bacon, chicken, lettuce, onion, and tomato. Serve immediately.
