
These honey mustard chicken BLTs are a variant of the the BLT sandwich with the super yummy addition of blackened chicken breast, red onion and honey mustard mayo. The standard BLT is pretty perfect on its own, especially in summer if you have good tomatoes, but this sandwich was pretty darn good too.
I used boneless skinless chicken breasts that I cut in half into two equal pieces and then I sort of butterflied the thicker end so it would cook in roughly the same time as the thinner end. You could use thighs here too if you prefer. I marinated them overnight in a blackened seasoning mixture made from stuff I had in the spice cabinet. I used my homemade rolls for these, but any bread or rolls will work.
We love sweet baby ray’s bbq sauce so I tried the golden mustard dipping sauce from them for this, but we found it didn’t have much mustard flavor, so I combined it with some Dijon mustard for more punch. The bacon, lettuce and tomato add their usual deliciousness and the red onion was a nice addition to that flavor profile. I will definitely make these again.

Honey Mustard Chicken BLTs
Ingredients
For the chicken:
- 2 lbs chicken breasts, or tenders
- 1/2 tbsp smoked paprika
- 1/2 tsp cayenne
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp thyme
- 1 tsp black pepper
- 1 1/2 tsp salt
- 2 tbsp olive oil
For the sandwiches:
- buns or bread
- cooked bacon
- shredded lettuce
- sliced tomato
- sliced red onion
- honey mustard mixed half and half with mayo
Instructions
- Combine the seasoning for the chicken and mix in a ziploc with the chicken pieces. If using breasts, cut into 2 pieces and butterfly the thick end to make cooking easier. Allow to marinate at least an hour up to overnight.
- Heat 2 tbsp oil in a skillet over medium high and add the chicken. Cook, flipping once or twice until nicely browned and cooked through.
- Cook the bacon in your preferred method. I like to use the oven. Slice your rolls and add some honey mustard mayo to both sides. Top with bacon, chicken, lettuce, onion, and tomato. Serve immediately.
