Mexican Tortellini
Tortellini in a Mexican flavored sauce with beans, cheese, cilantro, sour cream and scallions

- 1 family size package of tortellini cooked
- 1 lb ground beef or turkey
- 1 tbsp taco seasoning I make my own with onion powder, garlic powder, chili powder, cumin, coriander and oregano
- 2 cups red enchilada sauce
- salt and pepper to taste
- 1/4 cup sour cream
- 1/2 cup salsa
- 1 can black beans
- shredded cheese for serving
- cilantro and scallions for serving
- extra sour cream for serving
Cook tortellini according to package. While it is cooking, add a tbsp of oil to a deep skillet and brown your ground meat. Season with salt, pepper and taco seasonings.
When the meat is browned up, add in the enchilada sauce and salsa and a little water and simmer for 5-10 minutes. Stir in the 1/4 cup sour cream and taste the sauce and adjust seasoning as needed. Add the black beans and the tortellini and cook until hot.
Spoon into bowls and top with cheese, sour cream, cilantro, scallions and hot sauce.
