
Since I’ve been really busy with our Etsy store, I have been looking for quick and easy dinner recipes that don’t require a lot of prep. I saw a picture of something similar to this online and immediately wanted to eat it, so I made my own version.
This dish starts with refrigerated tortellini, topped with a sauce made from ground meat (I used turkey), enchilada sauce, taco seasoning, salsa, and sour cream. I also threw in some black beans for extra protein and topped with shredded cheddar cheese, cilantro, scallions and a touch more sour cream.
Start to finish this probably took me 30 minutes to make and we all enjoyed it. I served some roasted carrots on the side and I highly suggest serving with extra shredded cheddar for topping and some hot sauce.

Mexican Tortellini
Ingredients
- 1 family size package of tortellini cooked
- 1 lb ground beef or turkey
- 1 tbsp taco seasoning I make my own with onion powder, garlic powder, chili powder, cumin, coriander and oregano
- 2 cups red enchilada sauce
- salt and pepper to taste
- 1/4 cup sour cream
- 1/2 cup salsa
- 1 can black beans
- shredded cheese for serving
- cilantro and scallions for serving
- extra sour cream for serving
Instructions
- Cook tortellini according to package. While it is cooking, add a tbsp of oil to a deep skillet and brown your ground meat. Season with salt, pepper and taco seasonings.
- When the meat is browned up, add in the enchilada sauce and salsa and a little water and simmer for 5-10 minutes. Stir in the 1/4 cup sour cream and taste the sauce and adjust seasoning as needed. Add the black beans and the tortellini and cook until hot.
- Spoon into bowls and top with cheese, sour cream, cilantro, scallions and hot sauce.
