Roast Beef Crostini with Horseradish Blue Cheese Sauce

Tender marinated beef on baguettes with creamy sauce

Ingredients
  

For the beef:

  • 1 lb deli roast beef
  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 2 tsp minced fresh rosemary
  • 1/2 tsp red pepper flakes
  • salt and pepper

For the sauce:

  • 1/2 cup sour cream
  • 1 tbsp horseradish
  • 2 tbsp chopped chives
  • 1/2 cup blue cheese crumbles
  • salt and pepper

To serve:

  • 1 baguette cut into slices and toasted
  • chopped chives, arugula or both

Instructions
 

For the beef:

  • Mix the roast beef with the marinade ingredients and let sit in the fridge for a few hours.

For the sauce:

  • Combine all the ingredients in a bowl. Season with salt and pepper.

To assemble:

  • Toast the baguette rounds at 400 until lightly toasted. Top with marinated meat and a dollop of sauce. Then sprinkle with chives. If using arugula, put on top of the meat before adding the sauce.
