
Roast beef crostini with horseradish and blue cheese sauce starts with toasted baguette rounds (see my recipe for homemade baguettes if you’d like to try making your own). The rounds are topped with deli roast beef (making this super quick to put together) that has been marinated in garlic, olive oil, salt, pepper, red pepper flakes and rosemary.
This delightful combo is then topped with a horseradish blue cheese sauce and chopped chives. These came together in about 10 minutes (I had made baguettes ahead of time). The horseradish blue cheese sauce was super yummy and I used some of the leftover sauce on my steak the next day.

If I make these again, I will add some arugula next time as well, because I felt like they could use another element. I think the strong flavor of arugula would go perfectly with this.
Roast Beef Crostini with Horseradish Blue Cheese Sauce
Ingredients
For the beef:
- 1 lb deli roast beef
- 1/4 cup olive oil
- 2 cloves garlic minced
- 2 tsp minced fresh rosemary
- 1/2 tsp red pepper flakes
- salt and pepper
For the sauce:
- 1/2 cup sour cream
- 1 tbsp horseradish
- 2 tbsp chopped chives
- 1/2 cup blue cheese crumbles
- salt and pepper
To serve:
- 1 baguette cut into slices and toasted
- chopped chives, arugula or both
Instructions
For the beef:
- Mix the roast beef with the marinade ingredients and let sit in the fridge for a few hours.
For the sauce:
- Combine all the ingredients in a bowl. Season with salt and pepper.
To assemble:
- Toast the baguette rounds at 400 until lightly toasted. Top with marinated meat and a dollop of sauce. Then sprinkle with chives. If using arugula, put on top of the meat before adding the sauce.
