24ozmini potatoesscrubbed, boiled until tender with salt and a few tbsp vinegar and cut in half
salt and pepper to taste
1tsponion powder
1tspgarlic powder
1tspdried thyme
1package sausage of your choice
1onionsliced
4garlic cloves minced
1bunchkale or other greenor a package of prewashed greens
juice of 1 lemon
Instructions
Boil the potatoes with vinegar and salt until tender. Drain and cut in half.
Add 2 tbsp oil to the skillet over medium high heat and allow to heat until very hot. Add the potatoes and allow to cook without moving until well browned. Flip them and brown them some more. Once they are well browned, move to a plate and reduce heat to medium.
Add other tbsp oil to the pan and then add the sausage and onion. Cook, stirring occasionally until the sausage is browned. Season with salt and pepper as you go and taste the salt level.
Add the kale to the pan and sprinkle with the garlic, onion powder and thyme. Stir and cook for about 5 minutes until the kale is bright green and wilted. Squeeze the lemon juice over and taste for seasoning. Serve with some hot sauce. We used Truff which isn't that spicy but has great flavor. Link in my favorite things.
