Sausage, Kale and Potato Skillet

This sausage, kale and potato skillet is about as easy as homemade dinner gets. You can cook it all in one pan, and it was delicious and satisfying. It is simply seasoned with salt, pepper, onion, garlic, thyme and lemon.

You can use many different kinds of sausage in this recipe. I used turkey kielbasa, but you could use your favorite chicken sausage, Italian sausage, any kind of sausage you prefer. The potatoes are boiled first until tender, so by the time you add them to the pan, you are just getting a nice brown crisp on them. I like to boil my potatoes with plenty of salt and also a few tbsp of white vinegar because this really gives them great flavor.

I really love kale in this dish because it is pretty sturdy and it holds up well against the sausage and potatoes, but other greens would be fine too. I really enjoyed the combo of sausage, potato and leafy green. I sprinkled the kale with some onion powder, garlic powder and salt when I added it to the skillet to up the flavor a little.

We ate this with Truff hot sauce, which we love. It has a ton of flavor, but it isn’t all that spicy. There is a link on my Favorite links page to it if you are interested.

Sausage, Kale and Potato Skillet

One pan meal with sausage, pan fried potatoes and sauteed kale

Ingredients
  

  • 3 tbsp olive oil
  • 24 oz mini potatoes scrubbed, boiled until tender with salt and a few tbsp vinegar and cut in half
  • salt and pepper to taste
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 package sausage of your choice
  • 1 onion sliced
  • 4 garlic cloves minced
  • 1 bunch kale or other green or a package of prewashed greens
  • juice of 1 lemon

Instructions
 

  • Boil the potatoes with vinegar and salt until tender. Drain and cut in half.
  • Add 2 tbsp oil to the skillet over medium high heat and allow to heat until very hot. Add the potatoes and allow to cook without moving until well browned. Flip them and brown them some more. Once they are well browned, move to a plate and reduce heat to medium.
  • Add other tbsp oil to the pan and then add the sausage and onion. Cook, stirring occasionally until the sausage is browned. Season with salt and pepper as you go and taste the salt level.
  • Add the kale to the pan and sprinkle with the garlic, onion powder and thyme. Stir and cook for about 5 minutes until the kale is bright green and wilted. Squeeze the lemon juice over and taste for seasoning. Serve with some hot sauce. We used Truff which isn't that spicy but has great flavor. Link in my favorite things.
