Nilla wafers are most often used in banana pudding, which is probably the most delicious way to use them. I have a great banana pudding recipe I will share in the future, but this recipe is a fun one for making just your own homemade vanilla wafer cookies. It is a pretty quick and easy recipe, but it works best with a piping bag and 1/2 inch tip. I have these:
You can also use a small cookie scoop instead, but the dough is pretty sticky, so piping is so much faster. Plus its fun! I use my trusty kitchen scale I talked about here to measure the ingredients, but you don’t have to.
- 8 oz (or 1 7/8 cups AP flour)
- 4 oz (1 stick) unsalted butter, softened
- 3 1/2 oz sugar (1/2 cup)
- 1 oz honey (1.5 tbsp)
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 tbsp vanilla extract
- 4 egg yolks
- 3 oz of cream
Preheat the oven to 325 and line a few baking sheets with parchment paper. In a stand mixer with paddle, cream the butter and sugar for a few minutes until light and fluffy. Add the vanilla, honey, baking soda, salt and mix well. Add the yolks one at a time, allowing them to blend in each time. Turn the mixer off and add the flour. Turn on low and allow to mix while slowly adding the cream. Only mix until combined. Scrape the dough into a piping bag with a 1/2 inch tip. Pipe 1 inch circles onto the parchment.
Using a clean finger dipped in water or cream, smooth the peaks left by piping. Bake for 4 minutes and then rotate the sheet and bake 3-4 more minutes until slightly browning and firm to the touch. The length of time depends on your oven, so check the first batch early. Allow to cool and store in a air tight container.
