
I decided to try this recipe because it looked so fresh and light and delicious, and it was. It is really simple to make. You just need some lemon syrup, which takes 5 minutes to make, some coconut milk, lemon juice, and ice. This is a little bit like this Brazilian Limeade recipe that I love, but less sweet and a little more creamy because of the coconut milk. This would be a great summer time drink.

To make the lemon syrup you just cook equal parts sugar and water with either some lemon zest, or my favorite true lemon powder. Let it cool, then mix some with coconut milk, lemon juice and ice and blend and that’s it. The coconut milk gives it a very creamy texture that nicely offsets the tartness of the lemon. This recipe made about 2 servings, so you could double it and blend in a blender for a group.
Whipped Frozen Lemonade
Ingredients
For the syrup:
- 1/2 cup sugar
- 1/2 cup water
- zest of 1 lemon or 4 packets true lemon
For the lemonade:
- 1/2 cup freshly squeezed lemon juice
- 1 cup full fat coconut milk
- 1/2 cup lemon syrup
- 2 1/2 cups ice cubes
Instructions
For the syrup:
- Combine the sugar, water and lemon zest or true lemon in a small sauce pan and bring to a boil while stirring occasionally. Allow to cool fully before using.
For the lemonade:
- Combine the ingredients in a blender cup and blend until smooth. Serve immediately.
