German Potato Salad

I am not a huge fan of the typical mostly mayo potato salad because it is often pretty boring, but I absolutely love potato salad with vinegar based dressings like this German potato salad and also this Bacon Blue Cheese Potato Salad.

German potato salad is slightly sweet, a bit tart from the vinegar with a punch of Dijon mustard, tasty bacon and some pepper and celery seed. It is super easy to make and really good served warm or room temp. We ate this as a side dish with some sandwiches I will posting soon as well.

German Potato Salad

Delicious German potato salad with bacon, parsley and dijon vinaigrette
Prep Time 10 minutes
Cook Time 20 minutes

Servings 6 servings

Ingredients
  

  • 2.5 lbs waxy potatoes I used small yellow potatoes
  • 1 pack bacon
  • 1 onion diced
  • 1/2 cup white vinegar
  • 1/4 cup water
  • 3 tbsp sugar
  • 1 tsp salt
  • black pepper
  • 1 1/2 tsp celery seed
  • 1 tbsp Dijon mustard
  • chopped fresh parsley

Instructions
 

  • Cook potatoes in boiling salted water until fork tender. I boiled my small potatoes about 10 minutes.
  • Drain and cut into chunks. Chop bacon and cook over medium low in a large skillet until crispy. Remove bacon and drain and remove all but 2 tbsp of the fat.
  • Add the onion and cook until lightly browned, about 5 minutes. Add in the vinegar, water, sugar, salt, pepper, and celery seed along with the mustard and allow to come to a boil. Add the potatoes and cook, stirring until the sauce has thickened a bit. Move to a bowl and toss with the bacon and parsley and serve warm or room temp.
