Spring Salads

As we start to see hints of spring, I start being drawn to fresh and light food that fits the season. I love the comfort food of winter, and it helps get me through the dark and colder days. Spring is such a time of light and growth and it is nice to eat accordingly. I’ve rounded up a bunch of my most favorite salads that are hearty enough to eat as a meal, but light and fresh in keeping with spring.

Left to right, top to bottom they are as follows:

Cilantro Lime Chicken Taco Salad – marinated chicken, cherry tomatoes, black beans, carrots, bell pepper, cheese, avocado, lettuce, and crunchy tortilla strips with yummy homemade Catalina dressing.

Thai Beef Salad – seared steak, lots of fresh veggies and herbs and a fabulous lime, ginger and garlic dressing.

Pesto Chicken Caesar Salad – pesto marinated chicken, fresh tomatoes, croutons and parmesan in creamy caesar dressing.

Lemongrass Chicken Herb Salad – this salad is packed with flavor. Marinated chicken, green beans, tomatoes and lots of greens and herbs in lemongrass vinaigrette.

Kale Salad with Roasted Sweet Potatoes, Black Beans and Lemon Garlic Vinaigrette – A filling and delicious vegetarian option with lots of veggies, feta cheese and a tasty dressing.

Slow Roasted Salmon Salad with Citrus Vinaigrette – slow roasted salmon in a citrus marinade served over greens with a citrus herb dressing – so fresh and delicious!

Mediterranean Balsamic Chicken Salad – marinated chicken, lots of fresh veggies and a fantastic balsamic dressing to top it off. Use my favorite balsamic vinegar for amazing dressing.

Dumpling salad – I love this salad so much for its ease and its deliciousness. You can use vegetarian dumplings for a vegetarian meal if you like. This one is so fast for those nights when you don’t have much time.

Blackened Salmon Salad with Honey Mustard Dressing – yummy blackened salmon served over greens and veggies with a tasty homemade honey mustard dressing.
