This refreshing homemade ginger beer is naturally non-alcoholic and bursting with bold, warming flavor. Made with fresh ginger, lemon juice, and a blend of aromatic spices, it delivers a deep, spiced kick balanced by the bright citrus and mellow sweetness of brown sugar. Cinnamon, allspice, clove, and black pepper provide an interesting addition to the spicy ginger. It’s perfect served over ice on its own or as a lively mixer in mocktails and cocktails alike. A handcrafted twist on a classic, this ginger beer is both invigorating and comforting.

You can tailor this ginger beer to your tastes by adding less ginger if you prefer a drink with less kick. Changing up the spices also changes the flavor profile, or add some unflavored sparkling water to make a fizzy version. My family happens to love ginger and the more the better, so my version is highly ginger forward and spiced. If you would prefer a slightly more subtle drink, I’d recommend cutting the ginger down by 1/3 to 1/2 and reducing the spices as well. The sweetness level can also be adjusted to taste.

Homemade Ginger Beer

Slightly sweet and spicy with lemon and hints of cinnamon, clove, pepper and allspice

Ingredients
  

  • 2 6 inch pieces of ginger
  • 15 whole cloves
  • 1 tbsp allspice berries
  • 1 small cinnamon stick
  • 1 tbsp black peppercorns
  • 1-2 cups brown sugar
  • 4 lemons
  • 6 cups water

Instructions
 

  • Scrub the ginger and remove any peel you can't get clean. Cut into a few larger pieces. Combine the ginger and a cup of water in a small blender and well. Add this to a stock pot with 5 cups of water and the cinnamon stick, cloves, allspice and black pepper. Heat to a simmer and cook for 5 minutes, then cool and transfer to a container with a lid and place in the fridge overnight.
  • Strain the mix through a fine mesh strainer or cheesecloth. Add the juice from the 4 lemons and add 1 cup of sugar and stir to dissolve. Taste and add more sugar and lemon to taste. If you feel the ginger is too strong, you can add more water. You can also add sparkling water for a carbonated version. Serve over ice.
