Bucatini with Mushrooms, Spinach and Toasted Garlic

I was lucky enough to receive this amazing pasta gift basket from Gusta Pasta. I couldn’t wait to try some of it out. For this recipe I used the bucatini, olive oil and the Sugo alla Siciliana. This pasta is SO good. A huge step up from grocery store dried pasta. I loved the chewiness and flavor of the bucatini. The sauce also had really bright, fresh tomato flavor.

I wanted to keep this vegetarian so we could really let the sauce flavor shine. I add a bunch of sliced, toasted garlic, mushrooms and fresh spinach to the sauce and topped with a little parmesan. I’d have been happy just eating the sauce with no additions though too.

Bucatini with Mushrooms, Spinach and Toasted Garlic

Ingredients
  

  • 2 jars Suga alla Siciliana or other sauce
  • 6 servings bucatini
  • 8 cloves garlic thinly sliced
  • olive oil
  • 3 cups fresh spinach
  • 2 cups sliced mushrooms
  • salt and pepper
  • grated parmesan

Instructions
 

  • Heat 3 tbsp of oil in a deep skillet over high heat. Add the mushrooms and a pinch of salt and cook, stirring occasionally until they release their liquid and brown.
  • Add another tbsp of oil and reduce the heat to medium. Add the sliced garlic and allow to brown lightly but don't burn it. Add the fresh spinach and cook until it wilts.
  • Add the jars of sauce and allow to simmer for 10 minutes, adding a little water if needed. Season with salt and pepper.
  • Cook the bucatini according to the package. It only needs 3-4 minutes if you use Gusta pasta. Drain and add to the pan with the simmering sauce. Mix well and serve with grated parmesan.
