
Growing up in the Midwest, sweet corn is pretty much a summer time staple. I absolutely love fresh corn on the cob with butter and salt. I also love any salad made with fresh corn. This is simple but flavorful summer time salad that goes great with anything grilled, as a side dish at a party or bbq, or just to eat for lunch.
This easy salad is made with fresh corn that is briefly charred, scallions, jalapeno, cilantro, lime juice, a bit of sour cream and some salt and pepper. That’s it. If you have a gas stove top like I do, you can can just char the corn over your stove flame by turning it up pretty high and placing the corn directly onto the burners. If you have electric, you can use your oven broiler or a grill. It only takes a few minutes to char some of the kernels. You aren’t fully cooking the corn, just adding a little char to some of the corn, which deepens the flavor and gives a nice toasted taste to the salad.
You could also add some parmesan and little chili powder to this to make it close to the Mexican street corn side dish, which is also love so much.
Charred Corn Salad
Ingredients
- 6 ears fresh sweet corn
- 4 scallions sliced
- 1/2 cup cilantro leaves chopped
- 2-4 tbsp sour cream to taste
- 1 jalapeno diced
- 2 tbsp lime juice
- salt and pepper
Instructions
- Char the ears of corn either over an open flame or in the broiler or grill. You don't want to char the whole thing, just some of it. Cut the corn off the cobs into a large bowl.
- Add the rest of the ingredients and mix well. Taste and adjust the seasoning as needed. You can also add some grated parm to this.
