
One of the best ways to cook vegetables is to use a wok! These wok charred green beans are not exception. Woks get super hot and they allow you to add great char and flavor to whatever you cook in them. This is especially great with vegetables because you can keep them fresh and crisp and not turn them to mush.
Wok charred green beans are one of my favorite vegetable side dishes. It takes only a few minutes to make this dish, and it is really fresh and flavorful. The green beans are stir fried briefly in a very hot wok. Ginger and garlic are added, along with a little soy sauce and salt, and tossed for another minute or two and there you go! Your dish is done.
We had these last night with this amazing crispy Sichuan chili chicken and soy ginger potatoes. It was a wonderful meal. If you don’t have a wok, I highly suggest getting one. If you don’t want to get one, you can also use a skillet it make these. Just make sure to get it as hot as you can before adding the beans, and don’t stir them much so they have a chance to blacken in spots.

Wok Charred Green Beans
Ingredients
- 4 cups fresh green beans ends removed if needed
- 2 garlic cloves minced
- 1 2 inch piece fresh ginger peeled and minced
- 1 tbsp oil
- 2 tbsp soy sauce
- salt to taste
Instructions
- Mince the ginger and garlic. Heat a wok or a skillet over very high heat until it is as hot as you can get it. Add the oil and trimmed green beans and let them cook until some blackened areas appear. Toss and cook for another minute or two. Add the ginger and garlic and soy sauce and toss briefly. Serve immediately.
