It’s all brought together with a bright, tangy shallot vinaigrette made with champagne vinegar and finely minced shallots for a touch of elegance. Fresh, balanced, and full of bold flavor, it’s a perfect main dish salad for lunch or dinner.
I love a Cobb salad and this one is extra tasty because of this dressing. I love the combo of champagne vinegar and shallot. You could also use white wine vinegar instead if you don’t have champagne. We also added some olives to this since we love them. Using deli ham and turkey make this a quick meal, but you could sub some cooked chicken here also. Check out my full list of salads here. Cobb Salad with Shallot Vinaigrette
Ingredients
For the dressing:
- 1 shallot finely minced
- 2 tbsp coarse mustard
- 2 tbsp honey to taste
- 1/3 cup champagne vinegar
- 1/3 cup olive oil
- 2 tbsp water
- salt and pepper to taste
For the salad:
- 2 heads romaine lettuce washed and chopped
- 2 large tomatoes diced
- crumbled bacon
- 1 avocado diced
- 1 cup blue cheese crumbles
- 4 hard boiled eggs halved
- 8 oz deli ham sliced into sticks
- 8 oz deli turkey sliced into sticks
Instructions
- Whisk all the dressing ingredients together, taste, and season with salt and pepper. Place the lettuce, tomato, turkey, ham, eggs, avocado, tomato and bacon onto plates. Top with blue cheese crumbles. Drizzle with dressing and serve.
