Our Favorite Waffles

This has been our favorite waffle recipe for most of my kids lives. I’ve tried so many, and this one is the one that stuck. These waffles are light and airy and crispy. If you are looking for a dense, chewy kind of waffle, this isn’t the recipe for you.

We love a crispy waffle and it is actually tough to find a recipe that will make a waffle crispy. This recipe has cornstarch and also a relatively low amount of flour as compared to the wet ingredients. It also has a fair amount of oil in the batter, which helps the waffles crisp up well.

We eat these with whipped cream, not syrup. The whipped cream is a perfect compliment to the buttery, crispy texture of the waffle. They are fantastic with whipped cream and berries on them. You could use syrup too of course.

These come out best if you let the mixed up batter sit for 30 minutes before making them.

Ingredients
  

  • 3/4 cup AP flour
  • 1/4 cup cornstarch
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1/3 cup canola oil
  • 1 egg
  • 1 1/2 tsp sugar
  • 3/4 tsp vanilla
  • butter, whipped cream or syrup

Instructions
 

  • Combine the flour, cornstarch, baking powder, baking soda, sugar, salt and whisk to combine well. Add the milk, oil, egg and vanilla and mix well. Let sit for 30 minutes.
  • Heat up waffle iron and ladle appropriate amount of batter for your maker into the well. Cook on a medium setting until the waffle is crisp and brown. Serve immediately.
